Five Minute Brownies

When I was home last Christmas I went through one of my mom’s recipe books. They were all recipes that can be made in the microwave. Today I decided to make one that my mom would make for us quite often. While mine didn’t turn out exactly like hers, they are still pretty good for a quick brownie fix. They would be even better if you topped them off with some of your favorite icing!

Ingredients:
2/3 cup butter or margarine
1 cup sugar
2 eggs, slightly beaten
1 tsp vanilla
1 cup sifted flour
1/4 cup dry cocoa
1/4 cup instant cocoa (I didn’t know what this was so I just used 1/2 a cup of regular cocoa)
1/2 tsp baking powder
1/2 cup chopped walnuts (I didn’t use these as I don’t like nuts in my food)

Directions:
Melt butter in bowl on High for 1 minute or until melted. Add sugar. Cool. Add eggs and vanilla. Sift flour, dry cocoa, instant cocoa, and baking powder into sugar mix and blend. Stir in nuts. Pour into lightly greased pie plate. Cook on High for 4 1/2 to 5 1/2 minutes. Cool before cutting.

  1. Hmmm…these seem too easy which means that I might be tempted to make them way too often, haha. I’ve been known to sub nuts for semi sweet chocolate chips in my brownie recipes. I’ll have to give this one a try.

  2. If I wasn’t trying to become more healthy I would bake these right away!
